So hey, does anyone know what happens to all the old subject headings when something like this gets changed? Do all the Cookery SHs auto-magically get changed to Cooking? A quick search of WorldCat is not particularly instructive. . . .

Someone else may be able to give a more complete and accurate answer than I, but here's a shot.
If you are cataloging in OCLC you can set your subject headings to be automatically updated if they change. I'm not sure how long that system has been in place.
But, the fact that global updates haven't always been available is I believe why LC is so reluctant to make changes until they were ten years past sure that a change would take.
